The children tried their hand at making the classic Fujian dish, Lychee Sweet and Sour Pork, guided by a master of Fujian cuisine.
On the morning of January 13, the 10th “A Dish for Mom” public welfare event took place at Hexieyuan Fujian Cuisine Restaurant, a Fujian Cuisine Recommended Demonstration Restaurant, on Weiqian Street in Gulou District. Fujian cuisine masters held a live cooking class, teaching how to prepare the traditional Fujian dish Lychee Sweet and Sour Pork. More than 30 students from the First Affiliated Primary School of the Fuzhou Institute of Education attended the event, gaining firsthand insight into the artistry of Fujian cuisine and experiencing the warmth of family through food.
“Lychee Sweet and Sour Pork is a classic Fujian dish that every Fuzhou native knows well. With its unique sweet and sour flavor, this dish has won the affection of many diners…” On January 13, the cooking class on preparing Lychee Sweet and Sour Pork was led by Zhao Rutian, head chef of Hexieyuan Fujian Cuisine Restaurant and winner of the prestigious China Golden Chef Award. Lin Liang, a veteran Fujian cuisine master and the restaurant’s executive producer, shared insights into the culture of Fujian cuisine. Zhang Yun, the founder of Hexieyuan, guided the children through the key steps, helping them understand both the cooking techniques and the cultural significance of the dish.
“I used to think this dish was delicious because of its sweet and sour flavor, but today I’ve realized that its great taste comes from the chefs’ careful preparation and exceptional skills,” said Guo Situo, a sixth-grade student from the First Affiliated Primary School of the Fuzhou Institute of Education. At home, my grandma usually cooks delicious Lychee Sweet and Sour Pork. Now, I understand how much effort she puts into cooking. “I’ll try to learn more cooking techniques so I can make a dish for my parents and elders.”
According to the information, the Women Entrepreneurs Committee of the Fujian Catering and Cooking Industry Association was established on January 13, with Zhang Yun elected as its president. (Fuzhou Evening News Reporter: Li Jinqing/Text; Bao Hua/Photo)
