The Sino-French Fusion Dinnerwas held in Fuzhou

This year marks the 60th anniversary of the establishment of diplomatic relations between China and France. The Sino-French Food &Art Fusion Exchange Project, “àTable! Happy Gathering!”, made its debut in China, opening in Fuzhou on October 28.On the evening of November 23, a highlight of the project, the Sino-French Fusion Dinner, took place at the Ronghui · Shanshuihui Garden Restaurant in Minhou. It’snot only a feast combiningFrench culinary techniques with traditional Fujian cuisine, but alsoa platform for artistic and creative expression.

The exchange project was recommended by the French Ministry for Europe and Foreign Affairs and the Ministry of Culture,and launched by the Institut français and the French Consulate General in Guangzhou. It was hosted by the Fuzhou Cangshan District People’s Government and Ronghui Group, and co-organized by the Guihu Art Museum in Fujian Province and other institutions, with support from the Foreign Affairs Office of the Fuzhou Municipal People’s Government and the Fuzhou Municipal Bureau of Culture and Tourism.

The dinner featured not only exquisite cuisine but also artistic performances. Keti Irubetagoiena, the artistic director and theater director of the Théâtre Variable 2 in France, served as the event’s “chief director,” while another French artist, Kelly Paulme, took on the role of “fusion creative chef.”18guests were invited to the dinner, including experts in Fujian cuisine, dance artists, band vocalists, calligraphy artists, university professors, illustrators, seasoned food enthusiasts, and art curators.

The dinner followed the classic French mealstructure of “appetizers, main courses, and desserts,” using French culinary techniques to prepare local Fuzhou ingredients and sauces. Signature dishes included Fuzhou’s traditional red yeast sauce paired with French cuisine, yellow croaker fish served with coconut milk, and local Fuzhou fruits.
