Navy Yard Banquet
The Navy Yard Banquet was restored according to the "cookbook" recorded when the then naval commander Sa Zhenbing prepared a welcome banquet in Xiamen for the US Navy visiting China in 1908. The "Navy Yard" was established by the late Qing government to build a modern navy and save the country. The government paid special attention to the arrival of the US Navy. The recorded cookbook was mainly Chinese dishes that showed the Chinese culture, supplemented by Western desserts in order for friendly relations. The cooking methods of lots of dishes in the cookbook were lost due to complex procedures and rare ingredients. The restoration team visited the inheritors of Fujian cuisine and scholars of Fujian cuisine culture, and set up an expert advisor team to study the cookbook, ingredients, and cooking techniques according to the Fujian cuisine culture, navy culture and coastal dining habits, and finally formed the Navy Yard Banquet.
