A total of 65 Fujian dishes were included in the list of the first batch of protected Fujian cuisine in Fuzhou, including 30 hot dishes such as Fotiaoqiang and 35 local snacks such as fish balls, which are all representative and typical Fujian dishes in Fuzhou.

Fujian cuisine, as one of the eight major cuisines in China, was formed based on Fuzhou dishes and later integrated local flavors of eastern Fujian, southern Fujian, western Fujian, northern Fujian and Puxian.

There are 30 hot dishes on the List of First Batch of Protected Fujian Cuisine:

Fotiaoqiang, Instant-boiled Sea Clam in Chicken Broth, Sauteed Sliced Neptunea Cumingi in Rice Wine Sauce, Braised Spareribs, Lychee Sweet and Sour Pork, Stir-fried Pork Liver, Deep-fried Tenderloin, Deep-fried Whole Yellow Croaker Topped with Appetizing Sauce, Fried Kidney and Jellyfish, Fried Sea Bass in Sweet and Sour Sauce, Gold Chicken Shred, Braised Mashed Chicken with Sliced Bamboo Shoots, Stir-fried Clams, Sauteed Lamb Ribs in Rice Wine Sauce, Steamed Crab Rice, Sauteed Sliced Chicken in Rice Wine Sauce, Quick-fried Grass Carp, Pork Trotter with Ginger and Vinegar, Stewed Crab with Longan, Braised Bili Mutton, Stir-fried Glass Noodles with Seafood, Luochuan Salt Smoked Chicken, Baisheng Clam Pancake, Braised Oyster with Seaweed, Stewed Mutton with Dried Day Lilies, Steamed Eel in Soy Bean Sauce, Clear Noodles with Crab, Braised Pork Trotters with Litsea Cubeba Root, Braised Muscovy Duck with Taro, Fuquan Mutton, Oyster and Tofu Soup.
