On August 29, the “Fuzhou, the City of Gastronomy” Fujian Cuisine Promotion Conference, hosted by the Fuzhou Municipal Bureau of Commerce, will kick off in Shunde District, Foshan City, Guangdong Province. As the first Fujian cuisine promotion event of the year, it will bring about a wonderful fusion of Fujian and Cantonese flavors.
In 2022, Fuzhou launched its bid for “City of Gastronomy,” using food as a medium to promote Fujian cuisine culture. Last year, the “Fuzhou, the City of Gastronomy” Fujian Cuisine Promotion Conference took place in Shanghai, Yangzhou, and Chengdu. This year, the Fujian cuisine promotion event will be held in Fengcheng (a nickname for Shunde), aiming to foster exchanges and mutual learning between Fujian and Cantonese cuisines, and to support Fuzhou’s bid for “City of Gastronomy.”
Fuzhou and Shunde, as the key origins of Fujian and Cantonese cuisines, each have their own distinct yet complementary approach to food. Both regions place a strong emphasis on using fresh ingredients and preserving their natural flavors during cooking. Geographically, surrounded by mountains and the sea, they benefit from a diverse range of locally sourced ingredients. However, Cantonese cuisine tends to highlight savory and umami flavors, while Fujian cuisine strikes a balance between sweet and sour, giving each cuisine its own distinct and cherished taste.
Not only do Fuzhou and Shunde share a harmonious appreciation for culinary culture, but they also have much in common in terms of their historical and cultural heritage. Both Fuzhou and Shunde are ancient cities, with a long history of thousands of years and a wealth of cultural and intellectual resources. (Fuzhou Evening News Reporter: Quan Yiyue)
